I'm thinking cafes, looking at old buildings and wandering around being tourists but trying to find not-too-touristy things to do.

well i wish i could help..am trying to find info about places in Milan to do the same...see places during the day and party in the nite :)
Maastricht is a fine city to stroll around in when the weather is nice. IMO, you don't need a proper guide to get around; just head downtown and go where the streets take you. :) http://flickr.com/photos/michellzappa/sets/72157594531790388/
